Classic Chicken Enchiladas are guaranteed to become a staple in your home! Ingredients
- 2 tablespoons olive oil or avocado oil
- 1 small white onion, peeled and diced
- 1 1/2 pounds chicken breasts, boneless, skinless, and diced into small 1/2-inch pieces
- 1 (4 ounce) can diced green chiles, optional
- sea salt, to taste
- black pepper, to taste
- 1 (15 ounce) can black beans, rinsed and drained
- 8 large flour or corn tortillas
- 1 (28 ounce) can enchilada sauce
- 3 cups Mexican blend cheese, shredded
For the optional toppings:
- cilantro, to taste, chopped
- red onions, to taste, chopped
- avocado, to taste, diced
- jalapeño, to taste, chopped
- sour cream, to taste
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –Using a large skillet, heat the oil over medium-high heat.
Step 4 –Add in the onion and sauté until it is soft, about 3 minutes.
Step 5 –Add in the diced chicken and the green chiles.
Step 6 –Season the mixture generously with salt and pepper.
Step 7 –Continue cooking the mixture until the chicken is completely cooked through at 165 degrees F, about 6-8 minutes.
Step 8 –Add the beans to the mixture.
Step 9 –Remove the pan from the heat and cover. Set it aside.
Step 10 –Create an assembly line on a clean surface.
Step 11 –Lay out a tortilla.
Step 12 –Spread 2 tablespoons of the enchilada sauce evenly and completely on the tortilla.
Step 13 –Add a large scoop of the chicken filling mixture to the tortilla.
Step 14 –Add 1/3 cup of the cheese.
Step 15 –Roll up the tortilla.
Step 16 –Add the rolled-up tortillas in a single layer into the prepared baking dish.
Step 17 –Repeat the tortilla filling and rolling process using the remaining ingredients. Use an additional baking dish if needed.
Step 18 –Once all the enchiladas are formed, cover all of them with the remaining sauce and cheese.
Step 19 –Bake the dish uncovered until the enchiladas are cooked through and the cheese is bubbly, about 25-35 minutes.
Step 20 –Sprinkle with your favorite toppings, then serve!
