Pop, fizz, yum! Get your tastebuds ready for a bubbly, yummy take on one of the South’s favorite sides. Cola Baked Beans are rich in that sweet, syrupy, cinnamon flavor we all know and love from our favorite carbonated cola. Baked with some crispy bacon and tender beans for a nice savory-sweet balance, it’s no question that your Cola Baked Beans will be gone in a jiffy!

Ingredients

  • 6 slices of bacon, thick-cut
  • 1 large onion, diced
  • 1 clove of garlic, minced
  • 2 (15-ounce) cans of cannellini beans, 1 can drained and rinsed, 1 can undrained
  • 2 (15-ounce) cans of red kidney beans, drained and rinsed
  • 1/4 cup dark brown sugar, packed
  • 1/3 cup molasses
  • 3/4 cup cola
  • 1 (14.5-ounce) can of tomatoes, chopped and drained
  • 2 teaspoons dry mustard

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –In a large ovenproof skillet, over medium-high heat, cook the bacon until crisp and golden, about 5-7 minutes.

Step 3 –Drain the bacon onto a paper-towel-lined plate and allow it to cool off enough to handle.

Step 4 –Crumble the cooled bacon and set it aside.

Step 5 –Pour out all but 1 tablespoon of the bacon fat from the skillet.

Step 6 –Add the onion and garlic to the skillet and cook, stirring, until the onion is golden, about 5 minutes.

Step 7 –Add the cannellini beans, kidney beans, brown sugar, molasses, cola, tomatoes, dry mustard, and crumbled bacon into the onion mixture. Stir to combine.

Step 8 –Cover the skillet, transfer to the oven, and bake until the mixture is bubbly and the juices have thickened slightly, for about 1 hour.
