Comforting Mexican Soup

It’s a little brisk out there. It’s time to cozy up with some Comforting Mexican Soup! Your rosy cheeks will warm right up as you sip on spoonfuls of this Tex-Mex-seasoned broth, loaded with hearty chicken, refreshing corn, and your favorite salsa. Plus, it takes less than 30 minutes to throw together, so you won’t be cold for long. Mmm, there’s nothing more heartwarming than this! Grab a bowl of some Comforting Mexican Soup and get snuggly!

Ingredients

  • 2 teaspoons olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into 3/4-inch-thick pieces
  • 1 tablespoon reduced-sodium taco seasoning
  • 1 cup frozen corn
  • 1 cup salsa, store-bought or homemade
  • 1 (32-ounce) carton reduced-sodium chicken broth
  • tortilla strips, to taste, for garnish

Directions

Step 1 –In a large pot over medium-high heat, heat the oil.

Step 2 –Add the chicken pieces to the oil and cook, while stirring, until they reach an internal temperature of 165 degrees F, about 6-8 minutes.

Step 3 –Add the taco seasoning to the chicken pieces and stir until they are well-coated.

Step 4 –Add the corn, the salsa, and the broth to the chicken pieces and bring to a boil.

Step 5 –Reduce the heat to a simmer and cook the soup, uncovered, until the flavors have blended together, about 5 minutes.

Step 6 –Transfer the pot from the heat and discard any of the accumulated grease.

Step 7 –Serve the soup topped with the tortilla strips.
