Ingredients

  • 8 large eggs, room temperature
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 3/4 cups cottage cheese
  • 2 cups cheese, such as cheddar and Pepper Jack mixed, shredded
  • 1 (4-ounce) jar diced pimentos
  • green onions, to taste, sliced, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 2-quart baking dish.

Step 3 –In a large bowl, whisk the eggs.

Step 4 –Add the flour, the baking powder, the salt, and the pepper to the eggs and mix well.

Step 5 –Stir the cottage cheese, the shredded cheese, and the pimentos into the egg mixture.

Step 6 –Pour the egg mixture into the prepared baking dish and bake until the eggs are set, about 45-55 minutes.

Step 7 –Let the casserole rest for 5 minutes.

Step 8 –Serve the casserole garnished with the green onions.
