Ingredients
- 3 cups frozen hash brown potatoes
- 3/4 cup pepper jack cheese, shredded
- 1 cup ham, cooked and diced
- 1/4 cup green onions, chopped
- 1 (12-ounce) can evaporated milk
- 4 large eggs, beaten
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon salt
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat a 2-quart casserole dish with cooking spray.
Step 3 –Arrange the hash brown potatoes evenly at the bottom of the prepared dish.
Step 4 –Sprinkle the potatoes with the pepper jack cheese, the ham, and the green onions.
Step 5 –In a medium bowl, add the evaporated milk, the eggs, the pepper, and the salt and whisk to combine.
Step 6 –Pour the egg mixture over the layers in the baking dish.
Step 7 –Bake until a knife inserted into the center comes out clean, about 40-45 minutes.
