Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup buttermilk or plain kefir, room temperature
  • your preferred icing, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 12-cup cupcake pan with cupcake liners.

Step 3 –In a medium bowl, whisk the flour, the baking powder, and the salt together.

Step 4 –In a bowl, use an electric mixer to beat the butter and the sugar on medium-high speed until thick and fluffy, about 5 minutes. Scrape down the bowl as needed.

Step 5 –Add the eggs to the butter mixture, one at a time, beating well with each addition. Then, scrape down the sides of the bowl.

Step 6 –Add the vanilla to the egg mixture and beat to combine.

Step 7 –Reduce the mixer speed to medium and add the flour mixture in thirds to the egg mixture, alternating with the buttermilk, mixing to incorporate with each addition.

Step 8 –Scrape down the bowl as needed and beat until just combined and smooth.

Step 9 –Divide the batter evenly, about 2/3 full, into each of the prepared cupcake pan cups.

Step 10 –Bake until a toothpick inserted in the center comes out clean, about 20-23 minutes.

Step 11 –Let the cupcakes cool in the pan, about 5 minutes.

Step 12 –Transfer the cupcakes to a wire rack to cool to room temperature.

Step 13 –Frost the cupcakes.

Step 14 –Serve.
