Cowboy Sausage Stew

Hey there partner. Been on the trail long? Why not rest a spell by the fire? Kick off your boots, let your Stetson rest beside you, and help yourself to a bowl of Cowboy Sausage Stew. Nothing heartier on either side of the Mississippi, that’s for darn sure. It’s meaty, with plenty of beef and sausage for all you carnivorous folk, and there are some good old-fashioned beans and potatoes to round everything out. Doesn’t take too long for Cowboy Sausage Stew to come together either, so if you were looking to hit the dusty roads again, you’ll be feelin’ ready to rustle up some energy.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 pounds ground beef
  • 2 (12-ounce) packages kielbasa sausage, sliced into 1/2-inch pieces
  • 2 (14.5-ounce) cans peeled and diced tomatoes, drained
  • 2 (15-ounce) cans pinto beans, with liquid
  • 1 (15.25-ounce) can whole kernel corn, drained
  • 4 medium baking potatoes, peeled and diced
  • 2 (14.5-ounce) cans diced tomatoes with green chili peppers, with liquid
  • 1 (10-ounce) package frozen mixed vegetables
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • salt, to taste
  • pepper, to taste
  • 4 cups water

Directions

Step 1 –In a Dutch oven over medium heat, heat the olive oil.

Step 2 –Add the onion to the oil and sauté until it is translucent, about 3-4 minutes.

Step 3 –Add the ground beef to the onion and cook until no pink remains, about 5-7 minutes.

Step 4 –Add the sliced sausage to the ground beef and sauté until the slices are golden, about 3 minutes.

Step 5 –Add the tomatoes, the pinto beans, the corn, the potatoes, the diced tomatoes with chilis, and the mixed veggies to the meat mixture and mix well until everything is combined.

Step 6 –Add the garlic, the cumin, the chili powder, the salt, and the pepper to the stew mixture.

Step 7 –Add the water to the stew mixture and bring it to a boil.

Step 8 –Reduce the heat to low and let the stew simmer for 1 hour.

Step 9 –Taste the stew for seasoning.

Step 10 –Serve.
