Detox Salad

Sometimes when you think of salad, you may think of bland, boring, and just plain blah! Well, there is nothing boring about all of the flavors found in this Detox Salad. Let’s just list all the bountiful flavors you will find — juicy grapes, crispy apples, yummy pomegranate seeds, chopped greens, diced celery, sweet carrot rounds, crunchy walnuts, earthy pistachios, dried cranberries, and plump raisins. Look how much flavor is packed into this bowl of deliciousness! Detoxing has never tasted as good as it does with this Detox Salad and its wonderful array of textures and flavors. Enjoy this bowl full of healthy love!

Ingredients

  • 2 cups seedless grapes, halved
  • 3 Honeycrisp or Pink Lady apples, diced
  • 2 cups greens, of your choice
  • 2 stalks of celery, diced
  • 2 small carrots, peeled, sliced into thin rounds
  • 1/2 cup pomegranate seeds
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup pistachios, roughly chopped
  • 1/4 cup dried cranberries
  • 1/4 cup dried raisins or currants
  • 2 tablespoons olive oil
  • 3 teaspoons fresh lemon juice
  • sea salt, to taste
  • black pepper, to taste
  • sprouts, of your choice, to taste, for garnish
  • cilantro leaves, to taste, for garnish

Directions

Step 1 –In a large bowl, add the grapes, the apples, the greens, the celery, the carrots, the pomegranate seeds, the walnuts, the pistachios, the cranberries, and the raisins and toss to combine.

Step 2 –In a small bowl, add the olive oil, the lemon juice, the sea salt, and the black pepper and whisk to combine.

Step 3 –Pour the dressing mixture over the salad mixture.

Step 4 –Serve the salad garnished with the sprouts and the cilantro.
