  • 4 ounces chicken breast, boneless, skinless, cooked, shredded or diced
  • 1/2 cup celery, diced
  • 2 tablespoons green onion, sliced
  • 1/4 cup sweet, crisp apple, diced
  • 1 tablespoon light mayonnaise
  • 1 tablespoon light sour cream or Greek yogurt
  • 1/2-1 tablespoon fresh parsley or cilantro, optional, chopped
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon red wine vinegar
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon almonds, toasted and sliced

Step 1 –In a bowl, combine all of the ingredients except for the almonds, stirring to mix.

Step 2 –Cover and refrigerate the salad for 1 hour.
