Dirty Chicken Bake

Ingredients

  • 4 teaspoons vegetable oil, divided
  • 1 medium green bell pepper, chopped
  • 1 cup onions, chopped
  • 1 stalk celery, chopped
  • 2 teaspoons Cajun seasoning, divided
  • 1 teaspoon paprika
  • 1/8 teaspoon ground cayenne
  • 6 ounces andouille sausage links, fully-cooked and sliced
  • 1 1/2 cups uncooked instant white rice
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 1/2 cups reduced sodium chicken broth
  • 4 small chicken breasts, boneless and skinless
  • 2 tablespoons fresh parsley, chopped, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch glass baking dish with cooking spray.

Step 3 –In a 10-inch skillet over medium-high heat, heat 2 teaspoons of the oil.

Step 4 –Add the bell pepper, the onions, the celery, 1/2 teaspoon of the Cajun seasoning, the paprika, and the cayenne and cook, stirring occasionally, until the onions start to soften, about 2-3 minutes.

Step 5 –Add the sausage and cook until heated through, about 4-5 minutes.

Step 6 –Add the sausage mixture, the rice, the tomatoes and their juices, and the broth to the prepared baking dish and stir to combine.

Step 7 –In a medium bowl, add the chicken, the remaining oil, and the remaining Cajun seasoning, and stir to coat.

Step 8 –Place the seasoned chicken on top of the rice mixture and cover the baking dish with foil.

Step 9 –Bake for 15 minutes.

Step 10 –Uncover and bake until the chicken reaches an internal temperature of 165 degrees F, about 20-30 minutes.

Step 11 –Allow the bake to cool, about 15 minutes.

Step 12 –Serve garnished with the chopped parsley.
