Don’t-Kiss-Me Chicken

Everyone needs their space every now and again, and sometimes it can be a little awkward to admit it. We get it! When you’re in the midst of this conundrum, just make Don’t-Kiss-Me Chicken! This deliciously potent chicken dish is loaded with ample cloves of garlic, satisfying the hunger you’re craving and signaling to your sweetie that you need a bit of distance. And hey, he’ll be chowing down on Don’t-Kiss-Me Chicken, too, so his breath won’t exactly smell like a patch of daisies either… giving you just one more easy excuse to escape to your personal bubble!

Ingredients

  • 1 1/2 pounds chicken thighs, boneless and skinless
  • salt, to taste
  • pepper, to taste
  • mixed herbs, such as Italian seasoning, to taste
  • olive oil, to taste
  • 3 shallots, chopped
  • 40 cloves garlic, unpeeled
  • 1/2 cup dry vermouth or white wine
  • 3 sprigs fresh parsley
  • 1 teaspoon dried tarragon
  • 3/4 cup chicken stock

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Season the chicken thighs with the salt, the pepper, and the mixed herbs.

Step 3 –In a large oven-safe skillet over medium heat, heat the oil.

Step 4 –Add the seasoned chicken thighs to the hot oil and sear until they are golden-brown on both sides, about 10-15 minutes per side. They will not be cooked through.

Step 5 –Transfer the chicken thighs to a plate.

Step 6 –Reduce the heat to medium-low.

Step 7 –Add the shallots to the chicken juices in the skillet and cook, about 5 minutes

Step 8 –Add the garlic cloves to the shallots and cook, stirring occasionally, about 2 minutes.

Step 9 –Add the vermouth to the garlic mixture and cook until it reduces slightly.

Step 10 –Nestle the cooked chicken thighs into the garlic mixture and top with the parsley, the tarragon, and the chicken stock.

Step 11 –Bake the chicken mixture until the thighs reach an internal temperature of 165 degrees F, about 20-25 minutes.

Step 12 –If desired, using the back of a fork, gently mash the unpeeled garlic cloves to remove the roasted garlic and serve with the chicken.
