Dressed Up Chicken

Dressed Up Chicken isn’t just dressed up for a fancy meal, although it certainly wouldn’t be out of place at a formal affair! It’s also dressed up in a literal sense, coated in tangy, savory, and sweet Thousand Island dressing and crunchy, herby bread crumbs. The combination makes for the most flavorful and juicy chicken imaginable! Infused with sharp parmesan, Dressed Up Chicken is well-suited for a weeknight dinner that could use a touch of class and taste, in all senses of the word!

Ingredients

  • 2 pounds chicken breasts, boneless and skinless
  • 1/2 cup Thousand Island salad dressing
  • 1/2 cup panko bread crumbs
  • 1/4 cup parmesan cheese, freshly grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried tarragon or oregano

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Slice, cut, and pound the chicken breasts so that each piece is about 1/4-inch thick. The goal is to have each breast be uniform in size for even cooking.

Step 3 –In a small bowl, place the salad dressing.

Step 4 –In a separate bowl, place the panko bread crumbs, parmesan, salt, pepper, and tarragon, stirring to mix.

Step 5 –Line a baking sheet with parchment paper.

Step 6 –Dip each chicken breast, one at a time, in the dressing and then in the bread crumbs, making sure each piece is evenly coated.

Step 7 –Place the coated chicken onto the prepared baking sheet, about 1 inch apart.

Step 8 –Bake (rotating the pan halfway through the cooking) until the chicken is golden brown and crispy, and the chicken is cooked through at 165 degrees F internally, for about 30 minutes.

Step 9 –Serve hot.
