Ingredients

  • 40 cherry tomatoes, halved
  • 1 (15-ounce) can sweet corn
  • 1 (15-ounce) can black beans, rinsed and drained
  • 2 ripe avocados, diced
  • 1 red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 lemon or 2 limes, juiced
  • 1 teaspoon ground cumin, plus more or less, to taste
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • tortilla chips, optional, to taste, for serving

Directions

Step 1 –Add the cherry tomatoes, the sweet corn, the black beans, the avocados, the red onion, and the cilantro to a large serving bowl and toss to combine.

Step 2 –In a small bowl or a measuring cup, whisk the oil, the lemon juice, the cumin, the salt, and the black pepper together.
