Ingredients
- 1 pound fingerling potatoes, cut in half lengthwise
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon dried thyme leaves or 2 sprigs of fresh thyme
- 1 teaspoon pepper
- 1 tablespoon parmesan cheese, shredded
Directions
Step 1 –To begin, preheat the oven to 400 degrees F.
Step 2 –Combine the oil, the thyme, the potatoes, the garlic, the salt, and the pepper in a large bowl, mixing until evenly coated.
Step 3 –Spread the potatoes onto a baking sheet, flat-side down, baking for 15 minutes.
Step 4 –Remove the potatoes from the oven and cover them with the parmesan cheese.
Step 5 –Then return the potatoes to the oven for 10-15 minutes, cooking until the potatoes are golden-brown.
