Easy Chicken Parmesan Recipe

Ingredients

  • 1 1/2 cups panko bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/4 cup parmesan cheese, freshly grated, plus more for garnish
  • 2 large eggs, beaten with 1 tablespoon water
  • 1/2 cup all-purpose flour
  • 1 1/2 pounds chicken cutlets, boneless, skinless
  • kosher salt
  • black pepper, freshly ground
  • vegetable oil
  • 1 cup shredded mozzarella
  • 2 tablespoons extra-virgin olive oil
  • 1/2 small onion, finely chopped
  • 4 cloves garlic, sliced
  • 1 (28-ounce) can crushed tomatoes
  • 1/4 cup water
  • crushed red pepper flakes, to taste
  • 2 tablespoons parsley, freshly chopped, plus more for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Prepare the breading station with three large mixing bowls: one bowl with panko, garlic powder, and Parmesan mixed with a fork; another with the egg mixture; and the third bowl with flour.

Step 3 –Season chicken with salt and pepper, then coat each piece of chicken in flour and shake off excess.

Step 4 –Dip the chicken into the egg mixture and then into bread crumb mixture; repeat the steps for the remaining chicken and set aside on a plate.

Step 5 –In a deep cast-iron skillet over medium-high heat, add 1/4 inch vegetable oil.

Step 6 –When the pan is hot but not smoking, add the chicken.

Step 7 –Cook the chicken until golden brown, 5 to 7 minutes, flipping halfway through. Transfer to a paper towel-lined plate to drain.

Step 8 –In a medium pot over medium heat, heat the olive oil.

Step 9 –Add the onion and garlic and cook until soft, 4 minutes.

Step 10 –Add in the tomatoes and water, season with salt, pepper, and red pepper flakes, and let simmer, about 10 minutes.

Step 11 –Remove from heat and stir in the parsley.

Step 12 –Pour the sauce into a 9×13-inch baking dish and place the chicken in sauce.

Step 13 –Top with mozzarella and bake until the cheese is melty, 10 to 12 minutes. If desired, broil until the cheese is golden, 3 minutes.

Step 14 –Garnish with parsley and serve immediately.
