Easy Mexican Casserole

When it’s time to take it easy, you want an easy meal that still feels indulgent and flavorful. Easy Mexican Casserole is like nachos, the ideal easy snack, but with new depths for extra satisfaction. Layers of juicy ground beef melded with salsa drape over crunchy tortilla chips, fresh and refreshing tomatoes, and savory green onions so each slice is like biting into a Tex-Mex treasure. Ingredients

  • 1 pound of lean ground beef
  • 2 cups salsa
  • 1 (16-ounce) can chili beans, drained
  • 3 cups tortilla chips, crushed
  • 2 cups sour cream
  • 1 (2-ounce) can sliced black olives, drained
  • 1/2 cup green onion, chopped
  • 1/2 cup fresh tomato, chopped
  • 2 cups cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 9×13-inch baking dish with cooking spray.

Step 3 –In a large skillet over medium-high heat, cook the ground beef until it is no longer pink, about 8-10 minutes.

Step 4 –Stir in the salsa to the cooked beef.

Step 5 –Reduce the heat to low and simmer the beef mixture until the liquid is absorbed, about 20 minutes.

Step 6 –Stir the beans into the beef mixture and cook until heated through.

Step 7 –Spread the crushed tortilla chips in the prepared baking dish.

Step 8 –Spoon the beef mixture on top of the crushed chips.

Step 9 –Spread the sour cream over the beef mixture.

Step 10 –Sprinkle the olives, the green onions, and the tomato on top of the sour cream.

Step 11 –Cover everything with the cheddar cheese.

Step 12 –Bake until hot and bubbly, about 30 minutes.

Step 13 –Serve hot.
