These Mexican Chicken Skewers are seriously a taste of summer on a stick! Ingredients
- 1/2 teaspoon Mexican oregano
- 1/4 teaspoon ground cumin
- 1/4 teaspoon onion powder
- salt, to taste
- pepper, to taste
- 1/4 teaspoon garlic powder
- 1 tablespoon lime juice
- 1 tablespoon corn oil
- 1 pound chicken breasts, cut into 1-inch cubes
- 1 large red bell pepper, cut into small squares
- 1 large green bell pepper, cut into small squares
- 4 thick center-cut bacon slices, cut into 4 pieces each
- 1/2 medium red onion, cut into 1-inch pieces
Directions
Step 1 –Preheat the grill to medium-high heat.
Step 2 –In a medium bowl, combine the Mexican oregano, the cumin, the onion powder, the salt, the pepper, and the garlic powder.
Step 3 –Add the lime juice and the corn oil to the spice rub and stir to combine.
Step 4 –Add the chicken pieces to the spice rub mixture and stir to coat well.
Step 5 –Slide the red bell pepper squares, the green bell pepper squares, the chicken, the bacon, and the onion onto the skewer. Continue assembling the skewer in this order until the skewer is filled, and then repeat the process with the remaining skewers.
Step 6 –Place the skewers onto the grill and cook, flipping frequently, until the chicken reaches an internal temperature of at least 165 degrees F, about 3-4 minutes per side.
Step 7 –Serve.
