Easy Teriyaki Meatballs

Ingredients

For the meatballs:

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 1 teaspoon ginger, fresh grated
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon salt

For the sauce:

  • 1/2 cup soy sauce
  • 1/4 cup plus 1 tablespoon water, divided
  • 2 tablespoons dry sherry
  • 1 tablespoon brown sugar
  • 2 teaspoons garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 tablespoon cornstarch

For the garnish:

  • 1/4 cup green onions, sliced thin
  • 1 tablespoon sesame seeds

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a large baking sheet with foil.

Step 3 –Mix the ground beef, egg, panko bread crumbs, 1 teaspoon ginger, 1 teaspoon garlic, and salt, using your hands until everything is combined, while being careful not to over-mix.

Step 4 –Roll the meat mixture into tablespoon-sized balls.

Step 5 –Place the balls on the lined baking sheet.

Step 6 –Bake until browned and cooked to at least 135 degrees F internally, about 13-18 minutes.

Step 7 –Combine the soy sauce, 1/4 cup water, dry sherry, brown sugar, remaining garlic, and remaining ginger in a saucepan over medium heat.

Step 8 –Heat until the sugar has dissolved, about 2-3 minutes.

Step 9 –Mix the remaining water with the cornstarch to make a slurry.

Step 10 –Add the slurry to the sauce mixture and simmer on low heat until thickened.

Step 11 –Add the cooked meatballs to the sauce and toss to coat.

Step 12 –Top with green onions and sesame seeds.

Step 13 –Serve.
