Everyday Chicken Casserole

The everyday heroes are the ones we come to rely on the most. That’s certainly the case with this Everyday Chicken Casserole, a casserole that takes only 40 minutes and requires nothing too fancy or stressful to make! The results produce a dish that is cheesy, savory, hearty, and extremely rich, with plenty of tender noodles, plump chicken bites, and garden veggies to get you coming back for more! If you’re not careful, you might just be making Everyday Chicken Casserole every day!

Ingredients

  • 6 tablespoons butter, divided
  • 6 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 2 cups chicken broth, divided
  • 1 cup cheese of your choice, shredded
  • 1 bell pepper, diced
  • 1 cup celery, chopped
  • 1/2 cup white onion, chopped
  • 1 cup noodles of your choice, cooked and drained
  • 2 cups chicken, cooked and chopped
  • fresh chives, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a pan over medium heat, melt 4 tablespoons of the butter in a pan and stir in the flour, the salt, and the pepper.

Step 3 –Add the milk and 1 cup of the broth to the butter mixture and cook until it thickens and is smooth.

Step 4 –Stir the shredded cheese into the butter mixture.

Step 5 –In a separate pan, sauté the bell pepper, the celery, and the onion in the remaining butter.

Step 6 –Add the remaining broth to the veggie mixture and simmer for 5 minutes.

Step 7 –Add the veggie mixture to the sauce along with the noodles and the chicken and stir to combine.

Step 8 –Pour the chicken mixture into a 9×13-inch casserole dish and bake until bubbly, about 30 minutes.

Step 9 –Garnish with the fresh chives and serve.
