Fast-Fried Okra

Ingredients

  • vegetable oil, to taste
  • 2 large eggs, beaten
  • 2 tablespoons milk
  • 1 pound fresh okra pods, stem ends and tips cut off, pods sliced into 1/2-inch-thick pieces
  • 1 1/2 cups yellow cornmeal
  • 3/4 cup all-purpose flour
  • 3 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • dipping sauce, optional, of your choice, to taste, for serving

Directions

Step 1 –In a large skillet, add enough of the oil so that it is 1-inch-deep and heat until it reaches 350-375 degrees F.

Step 2 –In a bowl, add the eggs and the milk and beat to combine.

Step 3 –Add the okra pieces to the egg-milk mixture and let them soak.

Step 4 –In a large, resealable plastic bag, add the cornmeal, the flour, the salt, the black pepper, the smoked paprika, the garlic powder, and the cayenne pepper, seal it, and shake well to combine.

Step 5 –Drain the okra pieces from the egg mixture-milk and add them to the flour mixture. Seal the bag and shake to coat the pieces well.

Step 6 –Add the coated okra pieces to a baking sheet.

Step 7 –Add the okra pieces to the hot oil and fry until they are golden, about 2-3 minutes.
