Ingredients

  • 2 tablespoons olive oil
  • 2 whole chicken breasts, boneless and skinless, diced
  • 2 tablespoons Italian seasoning
  • salt, to taste
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 (14-ounce) jar marinara sauce
  • 1 teaspoon red pepper flakes
  • 12 ounces bowtie pasta, cooked according to the package directions
  • 1/2 cup whole milk ricotta cheese
  • 1 cup mozzarella cheese, grated
  • 1/4 cup parmesan, plus more for serving, grated
  • 12 whole basil leaves, plus more for serving, chopped

Directions

Step 1 –In a large skillet over medium-high heat, heat the oil.

Step 2 –Season the chicken breasts with the Italian seasoning and the salt.

Step 3 –Add the seasoned chicken breasts to the skillet and cook until they reach an internal temperature of 165 degrees F and are golden-brown, about 5-10 minutes. Transfer the chicken breasts to a plate.

Step 4 –Add the onion and the garlic to the same skillet and cook, while stirring, until they are fragrant, about 3 minutes.

Step 5 –Add the chicken broth to the onion mixture and cook, while scraping the bottom of the skillet to loosen the bits, until the broth has reduced, about 2-3 minutes.

Step 6 –Add the marinara sauce and the red pepper flakes to the broth mixture and simmer for 10 minutes.

Step 7 –Turn the heat off and add the cooked pasta, the ricotta, the mozzarella, the parmesan, the basil, and the chicken breasts to the marinara mixture and toss to combine.

Step 8 –Sprinkle with the parmesan and the basil and serve.
