Ingredients
- 1 1/2 cups unbleached all-purpose flour
- 1 cup rolled oats
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 cup bananas, mashed
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Line a 12-cup muffin tin with paper liners.
Step 3 –In a medium bowl, add the flour, the oats, the sugar, the baking powder, the baking soda, and the salt and stir to combine.
Step 4 –In a large bowl, add the egg and beat it.
Step 5 –Add the milk, the oil, and the vanilla to the egg and whisk to combine.
Step 6 –Add the mashed bananas to the egg mixture and stir to combine.
Step 7 –Add the flour mixture to the egg mixture and stir until just combined.
Step 8 –Spoon the batter into the prepared muffin cups, filling each cup about 3/4 full.
Step 9 –Bake until the tops spring back when lightly pressed, about 18-20 minutes.
