Ingredients

  • 1 tablespoon olive oil
  • 5 ounces smoked pancetta
  • 1 red onion, diced
  • 1 chicken breast
  • 1 red pepper, diced
  • 1 ounce canned chopped tomatoes
  • 5 ounces barbeque sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • salt, to taste
  • pepper, to taste
  • 5 ounces water

Directions

Step 1 –Preheat the oven to 355 degrees F.

Step 2 –In a nonstick, oven-safe skillet over low-medium heat, warm the olive oil.

Step 3 –Fry the diced onions and the pancetta until tender, about 5 minutes.

Step 4 –Add the chicken to the onion mixture and fry, stirring occasionally, until the chicken turns white on the outside, about 5 minutes.

Step 5 –Add the tomatoes, the barbeque sauce, the diced peppers, the smoked paprika, the oregano, and the chili flakes into the chicken mixture. Stir to combine.

Step 6 –Season the mixture with the salt and the pepper.

Step 7 –Add the water to the mixture and stir to combine.

Step 8 –Cover the skillet and bake until the chicken’s internal temperature reads 165 degrees F and the veggies are tender, about 1 hour.

Step 9 –Serve.
