Ingredients

  • 2 cups sour cream
  • 1 (16-ounce) can refried beans
  • 1 (4-ounce) can chopped green chiles or jalapeños
  • 1 (1-ounce) envelope fiesta ranch dip mix
  • 2 cups Mexican cheese blend, shredded and divided
  • ripe olives, optional, chopped and sliced
  • tomatoes, optional, sliced
  • green onions, optional, sliced
  • lettuce, optional, shredded
  • tortilla chips, optional, to taste, for serving

Directions

Step 1 –In a shallow 1-1/2-quart microwave-safe dish, combine the sour cream, beans, chiles, and the fiesta ranch dip mix.

Step 2 –Stir in 1 cup of cheese.

Step 3 –Cover and microwave on high for 2 minutes.

Step 4 –Stir.

Step 5 –Cover and microwave until heated through, about 1 minute 30 seconds.

Step 6 –Stir until blended.

Step 7 –Sprinkle with the remaining cheese.

Step 8 –Top with the olives, tomatoes, green onions, and lettuce, and serve with the tortilla chips.
