Ingredients
- 2 (6-ounce) cod fillets
- 1/8 teaspoon onion powder
- 1/4 teaspoon kosher salt, plus more, to taste
- 1/2 teaspoon paprika
- 3 tablespoons olive oil
- 12 ounces cherry tomatoes
Directions
Step 1 –Preheat the oven to 450 degrees F.
Step 2 –Use a sheet of foil to create a make-shift tray with edges by folding each edge over to make a barrier.
Step 3 –Place the fillets on the foil and sprinkle them with the onion powder, 1/4 teaspoon of the kosher salt, and the paprika.
Step 4 –Drizzle each of the fillets with 1/2 tablespoon of the olive oil.
Step 5 –Place the cherry tomatoes around the fillets, drizzle with the remaining olive oil, and season with the kosher salt.
Step 6 –Roast the fillets and the tomatoes until the fish reaches an internal temperature of at least 145 degrees F, and flakes apart.
Step 7 –Plate the fish with the tomatoes and drizzle with the juice that has collected in the foil.
Step 8 –Serve.
