Fran’s Famous French Onion Bake

If you adore the soup version, you will relish this dish! Fran’s Famous French Onion Bake is a great adaptation of the famous soup flavor you love! Plump chicken breasts are seasoned to perfection, topped with the famous onion mixture and some creamy mozzarella, and then baked and broiled until crispy deliciousness! Ingredients

  • 2 tablespoons unsalted butter
  • 5 large onions, thinly sliced
  • salt, to taste
  • black pepper, to taste, freshly cracked
  • 1/4 cup chicken broth, optional
  • 3 cloves garlic, minced
  • 3 chicken breasts, boneless and skinless, cut horizontally if thick
  • 1 teaspoon dried oregano
  • crushed red chili pepper flakes, optional, to taste
  • 2 teaspoons garlic powder
  • 1 cup mozzarella cheese, shredded
  • parsley, to taste, freshly chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large skillet over medium-high heat, melt the butter.

Step 4 –Add the onion, the salt, and the black pepper to the melted butter and cook until soft, about 5-8 minutes.

Step 5 –Reduce the heat to medium and cook, stirring occasionally, until the onions are caramelized, about 15 minutes. If the skillet gets too dry, add the chicken broth to deglaze the pan.

Step 6 –Add the garlic to the onions and cook, stirring occasionally, until fragrant, about 1 minute.

Step 7 –Transfer the onion mixture from the heat and let it cool slightly.

Step 8 –Season both sides of the chicken breasts with the oregano, the red chili pepper flakes, the salt, the black pepper, and the garlic powder. Use the salt lightly as the other ingredients will enhance the flavor.

Step 9 –Add the seasoned chicken breasts to the prepared baking dish.

Step 10 –Top each of the chicken breasts with 1/3 of the onion mixture.

Step 11 –Evenly sprinkle the mozzarella cheese over each of the onion-coated chicken breasts.

Step 12 –Bake the French onion bake until the chicken reaches an internal temperature of 165 degrees F and the cheese is bubbly, about 20-25 minutes.

Step 13 –Switch the oven to the broil setting and broil the French onion bake until the cheese is crisp, about 2 minutes.

Step 14 –Serve the French onion bake garnished with the parsley.
