Freaky Fast Fajitas

Need your Tex-Mex cuisine fix, and fast? Freaky Fast Fajitas are the answer to quickly curb your cravings! Your favorite cut of steak is seasoned to Tex-Mex perfection along with bell peppers and onions, then expediently air-fried for great taste fast. When added to a warm flour tortilla, with some lime wedges, scallions, and avocado, Freaky Fast Fajitas will deliciously get you on your way to a great meal. It’s freaky fast and flavorful!

Ingredients

For the fajitas:

  • 1 teaspoon kosher salt, plus more, to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lime juice
  • 2 tablespoons canola oil, divided
  • 1 (1-pound) skirt, flat iron, or flank steak, sliced into 1/4-inch-thick strips
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced

Optional, for serving:

  • 8 flour tortillas, warmed
  • lime wedges, to taste
  • scallions, to taste, sliced
  • avocado, to taste, chopped
  • cilantro leaves, to taste

Directions

Step 1 –Preheat the air fryer to 400 degrees F.

Step 2 –In a medium bowl, add 1 teaspoon of the salt, the cumin, the chili powder, the smoked paprika, the granulated sugar, the garlic powder, the onion powder, and the black pepper and whisk to combine. Set it aside.

Step 3 –In a large bowl, add the fajita seasoning mixture, the lime juice, and 1 tablespoon of the canola oil and whisk to combine.

Step 4 –Add the steak strips to the marinade mixture and toss to combine.

Step 5 –In a second large bowl, add the red bell peppers, the yellow bell peppers, the onions, and the remaining canola oil and toss to combine.

Step 6 –Add the fajita beef mixture, the vegetable mixture, and the extra salt and toss to combine.

Step 7 –In batches, add the fajita mixture, shaking the air-fryer basket every 4-5 minutes, and air-fry until the vegetables begin to blister and the steak is just cooked through and reaches an internal temperature of 145 degrees F for medium, about 15-17 minutes.

Step 8 –Plate the fajitas in the warmed flour tortillas, topped with the lime wedges, the scallions, the avocado, and the cilantro.

Step 9 –Serve.
