French Onion Baked Chicken

French Onion Soup is one of the classics of French cuisine and comfort food. French Onion Baked Chicken takes the sweet, mellow, cheesy flavors of the soup and transforms it into a rich, decadent sauce for juicy chicken. Ingredients

  • 3 tablespoons butter
  • 2 teaspoons olive oil
  • 4 large yellow onions, peeled and sliced
  • 1/4 teaspoon black pepper
  • 2 sprigs fresh thyme
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2/3 cup reduced-sodium beef broth, divided
  • 4 chicken breasts, boneless and skinless
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 cup mozzarella, shredded
  • 1/3 cup parmesan, shredded

Directions

Step 1 –Heat a large skillet over medium heat.

Step 2 –Add the butter, olive oil, and sliced onions to the oil and season with the black pepper.

Step 3 –Add the thyme sprigs to the butter mixture and cook, stirring occasionally, for 8 minutes.

Step 4 –While the onions are cooking, preheat the oven to 400 degrees F.

Step 5 –Butter a 9×13 inch baking dish.

Step 6 –Reduce the heat for the onions to medium-low and cook, stirring occasionally, for 15 minutes.

Step 7 –Stir the garlic into the onions and cook for 1 minute.

Step 8 –Stir the balsamic vinegar and 1/3 cup of the beef broth into the onion mixture.

Step 9 –Stir and cook the onion mixture until it is thick with a jam-like consistency, about 1 minute.

Step 10 –Add about a 1/2 cup of the caramelized onions to the prepared baking dish

Step 11 –Add the remaining beef broth to the baking dish and stir.

Step 12 –Season both sides of the chicken breasts with the kosher salt, the black pepper, the dried thyme, and the garlic powder.

Step 13 –Arrange the chicken breasts in the prepared baking dish and top each with a generous spoonful of the caramelized onions.

Step 14 –Top the chicken and the onions with the mozzarella and the parmesan.

Step 15 –Bake until the chicken is cooked to an internal temperature of 165 degrees F, about 25 minutes.

Step 16 –Serve.
