Fried Apples & Onions

What an unusual combination! And yet what a scrumptious side dish! Fried Apples & Onions brings out the best in its two major ingredients: the onions benefit from the sweetness and crispness of the tender cooked apples, while the apples gain a little savory flavor from the onions. A brown sugar topping adds a compellingly sweet and smoky element to this delightful side, ready to really emphasize a roasted chicken or slab of juicy pork. Which brings us to two questions: whoever would have thought of Fried Apples & Onions before?! And how will you ever stop thinking about it after you try it?!

Ingredients

  • 3 tablespoons butter
  • 3 large yellow onions, sliced
  • 6 large tart red apples, sliced
  • 1/2 cup brown sugar, packed
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/8 teaspoon ground nutmeg

Directions

Step 1 –In a large, cast-iron skillet or a heavy skillet, melt the butter over medium heat.

Step 2 –Add the onions and sauté until they are tender, about 5-7 minutes.

Step 3 –Place the apples on top of the onions.

Step 4 –Combine the brown sugar, the salt, the paprika, and the nutmeg in a bowl.

Step 5 –Sprinkle the brown sugar mixture over the apples.

Step 6 –Cover the skillet and let the mixture simmer for 10 minutes.

Step 7 –Uncover the skillet and simmer until the apples are tender, about 5 minutes.

Step 8 –Serve with a slotted spoon.
