Ingredients

  • 2 1/2 cups all-purpose flour, plus more, to taste, for dusting a work surface
  • 1 1/2 cups almond flour
  • 3/4 cup white sugar
  • 1 cup unsalted butter
  • 3 egg yolks
  • 1/4 cup vanilla sugar

Directions

Step 1 –In a bowl, add 2 1/2 cups of the all-purpose flour, the almond flour, and the white sugar and stir to combine.

Step 2 –Add the butter to the flour mixture and use your fingers to rub it in until coarse crumbs form.

Step 3 –Add the egg yolks to the crumb mixture and work it with your hands until a smooth dough forms.

Step 4 –Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour.

Step 5 –Preheat the oven to 350 degrees F.

Step 6 –Line a baking sheet with parchment paper.

Step 7 –Use the extra flour to dust a work surface.

Step 8 –Turn the dough onto the prepared work surface and roll it into long, thin pieces.

Step 9 –Cut the dough into 2-inch pieces and shape each piece into a crescent shape.

Step 10 –Place the crescents on the prepared baking sheet.

Step 11 –Bake the biscuits until they are lightly golden, about 10-15 minutes.
