Golden Apple Pie

This is a glittering treat that elevates the whole evening as if it were really made of gold. Golden Apple Pie is golden from top to bottom; the crust is buttery and perfectly flaky, baked to the perfect color. The filling uses crisp and sweet Golden Delicious apples to maintain that gleaming hue and to make the jammy, sweet, autumn-spiced dessert all the better. Silence can’t be golden, because the cheers when Golden Apple Pie is served are what is heard instead!

Ingredients

For the filling:

  • 6 cups Golden Delicious apples, peeled and sliced
  • 3/4 cup plus 2 tablespoons apple juice, divided
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 2 tablespoons cornstarch
  • 1/4 teaspoon vanilla extract

For the crust:

  • 2 1/2 cups all-purpose flour, plus more for flouring a worksurface
  • 1 teaspoon salt
  • 1 cup butter, cold
  • 6-8 tablespoons ice water

Directions

Step 1 –In a large saucepan, combine the apples, 3/4 cup of the apple juice, the sugar, the cinnamon, and the apple pie spice and bring the mixture to a boil over medium heat. Stir occasionally.

Step 2 –Combine the cornstarch and the remaining apple juice and add the mixture to the saucepan, stirring to combine.

Step 3 –Return the mixture to a boil, stirring constantly, and cook until thickened, about 1 minute.

Step 4 –Transfer the saucepan from the heat and stir in the vanilla.

Step 5 –Allow the mixture to cool to room temperature, stirring occasionally.

Step 6 –Preheat the oven to 400 degrees F.

Step 7 –Combine the flour and the salt in a bowl.

Step 8 –Cut the butter into the flour, mixing until it resembles crumbs.

Step 9 –Gradually add in the water, 1 tablespoon at a time, and toss with a fork until the dough can be formed into a ball.

Step 10 –Divide the dough into 2 portions, making 1 piece of dough slightly larger than the other.

Step 11 –Lightly flour a worksurface and roll out the larger dough piece.

Step 12 –Line a 9-inch pie plate with the rolled-out dough, trimming it so it is even with the edge of the plate.

Step 13 –Add the filling to the pie plate.

Step 14 –Roll out the second dough piece and place it over the filling.

Step 15 –Trim, seal, and flute the edges of the pie, and cut slits in the top of the crust to let steam escape.

Step 16 –Bake the pie until the crust is golden brown and the apples are tender, about 40-45 minutes.

Step 17 –Allow the pie to cool on a wire rack.

Step 18 –Slice and serve.
