Everyone fell in love with cookie butter the second it became a thing, and now the question becomes “how can we incorporate this into even more treats?” The answer starts with these Gooey Cookie Butter Bars. These blondie-like desserts are so chewy and tender, with the warm spiced sweetness of the cookie butter baked right in. It even comes topped with speculoos cookies on top! For all the cookie butter lovers out there, there are few things better than Gooey Cookie Butter Bars… except perhaps for seconds (or thirds)!
Ingredients
- 1/2 cup unsalted butter, melted
- 1/2 cup speculoos cookie butter
- 1 cup dark brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 6-8 speculoos cookies, such as Trader Joe’s® Speculoos Cookies or Biscoff® Cookies, broken into pieces
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease an 8×8 baking pan and line it with parchment paper. Make sure the parchment paper has some overhang to help get the bars out.
Step 3 –In a large bowl, add the melted butter, the cookie butter, and the dark brown sugar and mix them together using a spatula. You may need to press and spread the ingredients together, as the cookie butter is pretty thick.
Step 4 –Add the egg and the vanilla extract into the butter mixture and mix until fully combined.
Step 5 –Add the flour, the cinnamon, and the salt and mix until a dough forms.
Step 6 –Press the dough evenly into the prepared pan.
Step 7 –Press the crumbled speculoos cookies on top of the dough.
Step 8 –Bake until the center is not sticky to the touch, about 25-30 minutes. The bars probably won’t rise much.
Step 9 –Allow the bars to cool at room temperature for 20 minutes.
Step 10 –Transfer the bars to the refrigerator to cool until solidified, about 30-45 minutes.
Step 11 –Lift the cookie butter bars from the pan using the parchment paper overhang.
Step 12 –Slice and serve.
