Grandpa’s Rice Pudding

Ingredients

  • 3 1/2 cups 2% milk
  • 1/2 cup long-grain rice, uncooked
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • ground cinnamon, to taste

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease a 1 1/2-quart baking dish and line a baking sheet with foil. Place the baking dish on the baking sheet.

Step 3 –Add the milk, the rice, the sugar, and the salt to the saucepan over medium heat and bring the mixture to a boil, stirring constantly.

Step 4 –Transfer the rice mixture to the prepared baking dish.

Step 5 –Cover the dish with foil and bake the rice mixture, stirring every 15 minutes, for 45 minutes.

Step 6 –Carefully add the raisins and the vanilla to the rice mixture and stir to combine.
