Ingredients
- 1 1/2 cups rice, cooked
- 1/4 cup raisins
- 2 large eggs
- 1 1/2 cups whole milk, plus more, to taste, for serving
- 1/2 cup sugar
- 1/2 teaspoon ground nutmeg
Directions
Step 1 –Preheat the oven to 275 degrees F.
Step 2 –Grease a 1-quart casserole dish.
Step 3 –Place the cooked rice and the raisins in the prepared casserole dish.
Step 4 –In a small bowl, whisk the eggs, 1 1/2 cups of the milk, the sugar, and the nutmeg together.
Step 5 –Pour the egg mixture over the rice.
Step 6 –Bake the rice pudding, uncovered, until a knife inserted into the center comes out clean, about 45-50 minutes.
Step 7 –Allow the rice pudding to cool.
Step 8 –Serve the rice pudding with the extra milk.
