Happy Hot Chocolate

When you’re in need of something merry, fill up your mug with some Happy Hot Chocolate! Sipping on this sweet, chocolatey, dairy-free treat will make your heart (and tummy) feel quite joyful. Whether you’re hanging up the colorful lights or cuddling up with a nice book, Happy Hot Chocolate will add to your delightful occasion!

Ingredients

For the hot chocolate:

  • 1 cup canned light coconut milk
  • 1 1/2 cups unsweetened almond milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons pure maple syrup
  • 2 tablespoons unsweetened cocoa powder
  • sea salt, to taste

For serving:

  • candy canes, to taste, some crushed and some whole, divided
  • water, to taste
  • mini marshmallows, to taste

Directions

Step 1 –In a small pot, add the coconut milk, the almond milk, the vanilla extract, the maple syrup, the cocoa powder, and the sea salt and whisk vigorously until no lumps are left.

Step 2 –Warm the cocoa mixture until it is steamy, about 3-5 minutes. Do not let it come to a boil or it will burn the milk.

Step 3 –Once the chocolate is hot, transfer from the heat.

Step 4 –Pour the crushed candy canes on a plate.

Step 5 –Use the water to lightly moisten the rims of two serving mugs.

Step 6 –Dip the rims of the mugs in the crushed candy canes to coat.

Step 7 –Pour the hot chocolate into the prepared mugs.

Step 8 –Serve the hot chocolate garnished with the whole candy canes and the mini marshmallows.
