Holiday Cranberry Bread

Of course, this Holiday Cranberry Bread—the cake you can eat for breakfast guilt-free—has a little more joy for the world up its sleeve; crunchy walnuts for texture and a little extra wonder! Well, it’s no secret Holiday Cranberry Bread is on Santa’s Nice List!

Ingredients

  • 2 cups flour
  • 3/4 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, cut into pieces, softened
  • 1 tablespoon orange zest
  • 3/4 cup orange juice
  • 1 large egg, beaten
  • 1 cup cranberries, chopped
  • 1/2 cup walnuts, optional, chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8 1/2×4 1/2-inch loaf pan.

Step 3 –In a bowl, add the flour, the sugar, the baking powder, the salt, and the baking soda and whisk to combine.

Step 4 –Add the butter into the flour mixture and stir until combined.

Step 5 –Add the orange zest, the orange juice, and the egg to the flour mixture and mix well.

Step 6 –Fold in the cranberries and the walnuts.

Step 7 –Spoon the batter into the prepared pan.

Step 8 –Bake until a toothpick inserted into the center of the bread comes out clean, about 1 hour-1 hour 15 minutes.

Step 9 –Cool the bread in the pan for 10 minutes.

Step 10 –Transfer the bread to a wire rack to cool completely.
