Homemade Chicken Apple Sausage

Ingredients

  • 1 Granny Smith apple, unpeeled
  • 1 pound ground chicken, white and dark meat
  • 2 cloves garlic, grated
  • 2 scallions, chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon crushed red pepper
  • nutmeg, to taste
  • 4 teaspoons vegetable oil, divided

Directions

Step 1 –Use the large holes of a box grater to grate the Granny Smith apple, then discard the core and the stem.

Step 2 –Use a paper towel to gather the grated apples and carefully squeeze them to drain the juice. Reserve the grated apples and discard the paper towel and the juice.

Step 3 –Roughly chop the grated apples and transfer them to a large bowl.

Step 4 –Add the ground chicken, the garlic, the scallions, the salt, the black pepper, the fennel seeds, the crushed red pepper, and the nutmeg to the grated apple and gently mix to combine.

Step 5 –Use your hands to shape the sausage mixture into eight balls.

Step 6 –In a large cast iron skillet over medium heat, heat 2 teaspoons of the vegetable oil.

Step 7 –Use your hands to flatten four of the sausage balls into 3-inch-wide patties and cook until they are browned on both sides, and reach an internal temperature of 165 degrees F, about 6-8 minutes.

Step 8 –Transfer the cooked sausage patties to a plate and cover with aluminum foil to keep warm.

Step 9 –Add the remaining vegetable oil to the cast iron skillet, flatten, and cook the remaining patties.

Step 10 –Serve warm.
