Homemade Chicken Florentine Bake

The Homemade Chicken Florentine Bake knows what it actually means to make a great Chicken Florentine! Of course, it requires savory, juicy chicken, but it also needs the flavor of delightfully creamed spinach, with its garden freshness, tangy creaminess and hints of white wine and bright lemon. With the crunchy parmesan breadcrumbs on top, Homemade Chicken Florentine Bake makes even the fanciest meals feel like something Grandma would make!

Ingredients

  • 2 (10-ounce) packages frozen spinach, chopped
  • 3 pounds chicken breast, boneless, cooked and shredded
  • 2 (10.75-ounce) cans condensed cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup cheddar cheese, grated
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon curry powder
  • 1 cup dry white wine
  • salt, to taste
  • pepper, to taste
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup soft breadcrumbs, can substitute 1/4 cup dry breadcrumbs
  • 2 tablespoons butter

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13–inch casserole dish or two (9–inch) disposable aluminum foil pans with cooking spray.

Step 3 –Thaw the spinach in the microwave according to the package directions

Step 4 –Drain the spinach, squeezing as much liquid out of it as possible, and transfer it to a large bowl.

Step 5 –Combine the spinach and the cooked chicken.

Step 6 –In a medium bowl, add the cream of chicken soup, the mayonnaise, the sour cream, the cheddar cheese, the lemon juice, the curry powder, the wine, the salt, and the pepper and whisk until combined.

Step 7 –Pour the sauce mixture over the chicken-spinach mixture and stir with a spatula until well-combined.

Step 8 –Place the chicken mixture into the prepared casserole dish. Make sure to pat the mixture down so it is evenly spread throughout the casserole dish.

Step 9 –In a small bowl, combine the grated parmesan and the breadcrumbs.

Step 10 –Sprinkle the breadcrumb mixture over the top of the chicken mixture.

Step 11 –Dot the butter over the breadcrumb mixture.

Step 12 –Bake until bubbly, about 30 minutes.

Step 13 –Serve.
