In-a-Hurry Dumplings

Ingredients

For the soup:

  • 1 1/2 cups 2% milk
  • 1 1/2 cups frozen mixed vegetables, thawed
  • 2 1/2 cups chicken, cooked, cubed
  • 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon poultry seasoning

For the dumplings:

  • 1 cup biscuit/baking mix
  • 1/3 cup french-fried onions, coarsely chopped
  • 7 tablespoons 2% milk
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1 –In a Dutch oven, combine 1 1/2 cups of the milk, the frozen vegetables, the chicken, the cream of chicken soup, the garlic powder, and the poultry seasoning.

Step 2 –Bring the chicken mixture to a boil, stirring occasionally.

Step 3 –In a small bowl, mix the biscuit mix, the french-fried onions, the remaining milk, and the parsley just until moistened.

Step 4 –Drop the dumpling batter by heaping tablespoonfuls into the simmering soup and cook, uncovered, for 10 minutes.

Step 5 –Cover and allow the dumplings to simmer until a toothpick inserted into the center comes out clean, about 10-12 minutes.

Step 6 –Serve.
