Jack’s Popper Casserole

Jack is your classic party animal. He loves any excuse for a good time. But he especially loves the ones filled with groovy music and jalapeño poppers. That’s really his jam. He loves to celebrate every single moment in life, mundane or not, and as such, he thought it would be fun to create this Jack’s Popper Casserole. It’s loaded with all the spicy, creamy, and cheesy flavors from his favorite go-to party app, all blended together in one big dish so he can have it for dinner whenever he wants! And that’s how you know you’re the life of the party… when you can get the festivities poppin’ regardless of whether or not there’s actually any reason to celebrate! But hey, in true Jack fashion, we think having Jack’s Popper Casserole on the table is reason enough to get jiggy with it! So, come along! Let’s party!

Ingredients

  • 4 chicken breasts, boneless and skinless, cut into cubes
  • 1/2 tablespoon garlic powder
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup heavy cream
  • 5 jalapeño peppers, seeded and diced
  • 2 cups sharp cheddar cheese, shredded
  • 6 slices bacon, cooked and chopped

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Coat a 9×13-inch casserole dish with nonstick cooking spray.

Step 3 –Place the chicken cubes on the bottom of the prepared casserole dish, ensuring the cubes aren’t touching.

Step 4 –In a bowl, add the garlic powder, the cream cheese, and the heavy cream and mix to combine.

Step 5 –Pour the cream mixture over the chicken.

Step 6 –Sprinkle the cream mixture with the jalapeños and the cheese.

Step 7 –Bake the casserole until the chicken reaches an internal temperature of 165 degrees F, about 40-45 minutes.

Step 8 –Sprinkle the casserole with the bacon and serve.
