Killer Breakfast Potatoes

This is the secret to making great home fries at home… and these home fries are to die for! Yes, they really are that great! Killer Breakfast Potatoes ensure the potatoes are golden and crispy on the outside, but soft and fluffy on the inside. Plus, they’re herbaceous and extra-flavorful, so much so that you may not even want to dip them in ketchup or runny eggs! But trust us, you’ll find the most exciting way to enjoy Killer Breakfast Potatoes, even if they’re the only thing you have for breakfast!

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and diced into 1/2-inch-thick cubes
  • 3 tablespoons extra-light olive oil or another high-heat cooking oil
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • eggs, optional, to taste, cooked to your preference, for serving
  • 1 tablespoon parsley, optional, finely chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a baking sheet with parchment paper.

Step 3 –In a bowl, add the potatoes and the oil and toss to combine.

Step 4 –Sprinkle the potatoes with the paprika, the salt, and the black pepper and toss to evenly coat the potatoes.

Step 5 –Transfer the potatoes to the prepared baking sheet and spread them out in an even single layer.

Step 6 –Bake the potatoes until cooked through, about 20 minutes.

Step 7 –Stir the potatoes and set the oven to broil.

Step 8 –Broil the potatoes until golden-brown, about 2-4 minutes.

Step 9 –Serve with the eggs and garnish with the parsley.
