Kung Pao Shrimp & Noodles

Ingredients

  • 1 (16-ounce) box spaghetti
  • 2 teaspoons sesame oil
  • 3 green onions, thinly sliced
  • 2 teaspoons ginger, freshly minced
  • 1 pound shrimp, peeled and deveined
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon extra-virgin olive oil
  • 2 bell peppers, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons cornstarch
  • 1/3 cup low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 2 tablespoons rice vinegar
  • 1/2 cup peanuts, roasted
  • cilantro, optional, freshly chopped, for garnish

Directions

Step 1 –Bring a large pot of salted water to a boil.

Step 2 –Add the pasta to the pot and cook it to al dente, according to the package directions.

Step 3 –Drain the pasta.

Step 4 –In a large skillet over medium heat, heat the sesame oil.

Step 5 –Add the green onions and the ginger and cook until fragrant, about 1 minute.

Step 6 –Add the shrimp.

Step 7 –Season the shrimp with the salt and the pepper.

Step 8 –Cook the shrimp until opaque and cooked through to 145 degrees F, about 3 minutes.

Step 9 –Transfer the shrimp from the skillet.

Step 10 –Heat the olive oil in the same skillet.

Step 11 –Add the bell peppers and cook until soft, about 5 minutes.

Step 12 –Add the garlic and cook until fragrant, about 1 minute.

Step 13 –Add the cornstarch and stir to combine.

Step 14 –Pour in the soy sauce, the chicken broth, the sweet chili sauce, the sriracha, and the rice vinegar, and whisk until combined.

Step 15 –Simmer until the sauce thickens slightly, about 1-2 minutes.

Step 16 –Add the pasta, the shrimp, and the peanuts to the skillet, tossing to combine them with the sauce.

Step 17 –Garnish with the cilantro.

Step 18 –Serve.
