Ingredients

  • 1/2 cup apricot preserves
  • 1 teaspoon canola oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon crushed red pepper flakes
  • 1 pound large shrimp, peeled and deveined

Directions

Step 1 –Preheat the grill to medium heat.

Step 2 –In a small bowl, combine the apricot preserves, oil, soy sauce, and pepper flakes.

Step 3 –Thread the shrimp onto the skewers.

Step 4 –Grill uncovered and baste with the apricot mixture until the shrimp turn pink and are cooked through at 145 degrees F internally, about 2-3 minutes per side.

Step 5 –Serve hot.
