Little German Dumplings

Little German Dumplings, also known as Spaetzle, take the tenderness and eagerness to absorb flavorful sauces that dumplings are known for and puts them in miniature form! They’re so easy to make and ready for serving with all manner of pork, chicken, and steak. Or you could totally just eat them on their own! The only limit to these Little German Dumplings is your imagination!

Ingredients

  • 1/2 cup all-purpose flour, plus more, to taste
  • 1 large egg
  • 1/2 teaspoon kosher salt
  • cayenne pepper, to taste
  • 1 tablespoon crème fraîche, can substitute sour cream or plain yogurt
  • 3 tablespoons milk, plus more, to taste

Directions

Step 1 –In a mixing bowl, whisk together 1/2 cup of the flour, the egg, the salt, the cayenne, the crème fraîche, and 3 tablespoons of the milk until the batter drips slowly off the whisk.

Step 2 –Add more of the flour or the milk until the desired consistency is reached.

Step 3 –Bring a pot of salted water to a simmer over medium-high heat.

Step 4 –Use a spatula to push a spoonful of batter through the holes of the smooth side of a cheese grater into the simmering water.

Step 5 –Cook until the dumplings rise to the surface, about 2-4 minutes.

Step 6 –Transfer the cooked dumplings with a slotted spoon and repeat the cooking process in batches with the remaining batter.

Step 7 –Serve.
