Magic Chicken Pasta

Magic Chicken Pasta got its name because it tastes so good, you won’t hardly believe it’s real! But believe it or not, this dish is filled with Italian-seasoned chicken and a buttery, lemon sauce… not a magic potion! It’s easy to understand why you would question a dish so simple and so yummy… you can trust what you’re seeing and tasting here, though, because Magic Chicken Pasta is the real delicious deal!

Ingredients

For the chicken:

  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup flour
  • 1 cup parmesan, grated
  • 1 1/2 pounds chicken breast cutlets, boneless and skinless
  • 2 tablespoons olive oil

For the sauce:

  • 6 tablespoons butter
  • 4 cloves garlic
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 1/2 cup fresh basil, chopped, plus more, to taste, whole leaves, for garnish
  • 8 ounces pasta, such as fettucine, cooked
  • lemon slices, to taste, for garnish

Directions

Step 1 –In a shallow bowl, add the eggs and whisk to combine.

Step 2 –In another shallow bowl, add the salt, the pepper, the Italian seasoning, the flour, and the parmesan and mix to combine.

Step 3 –Dredge the chicken cutlets into the egg mixture, then immediately into the flour mixture to coat.

Step 4 –In a large skillet over medium-high heat, add the oil.

Step 5 –Add the coated chicken cutlets to the skillet and sear, about 2 minutes on each side.

Step 6 –Place the lid on the skillet and reduce the heat to low.

Step 7 –Cook the chicken cutlets until they reach an internal temperature of 165 degrees F, about 3-6 minutes.

Step 8 –Transfer the chicken cutlets to a resting plate.

Step 9 –Add the butter and the garlic to the same skillet and increase the heat to medium. Stir until the butter has melted.

Step 10 –Add the chicken broth and the lemon juice to the garlic-butter and bring to a simmer.

Step 11 –Cook the sauce mixture until it has reduced by about 1/3.

Step 12 –Add 1/2 cup of the basil and the cooked pasta to the sauce and stir to combine.

Step 13 –Place the cooked chicken in the pasta mixture.

Step 14 –Serve the chicken pasta garnished with the extra basil leaves and the lemon slices.
