Popcorn Shrimp Tacos

Ingredients

For the coleslaw:

  • 2 cups coleslaw mix
  • 1/4 cup fresh cilantro, minced
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1 jalapeño pepper, optional, seeded and minced

For the tacos:

  • 2 large eggs
  • 2 tablespoons 2% milk
  • 1/2 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 pound medium-large shrimp (about 40 per pound), peeled and deveined
  • cooking spray, to taste
  • 8 (6-inch) corn tortillas, warmed
  • 1 medium avocado, sliced

Directions

Step 1 –In a small bowl, add the coleslaw mix, the cilantro, the lime juice, the honey, the salt, and the jalapeño and toss to combine and coat.

Step 2 –Grease the tray inside the air fryer.

Step 3 –Preheat the air fryer to 375 degrees F.

Step 4 –In a shallow bowl, add the eggs and the milk and whisk to combine.

Step 5 –In a separate shallow bowl, add the flour.

Step 6 –In a third shallow bowl, add the panko, the cumin, and the garlic powder.

Step 7 –Dip the shrimp in the flour to coat both sides and shake off the excess.

Step 8 –Dip the shrimp in the egg mixture and then in the panko mixture, patting to help the coating adhere.

Step 9 –In batches, arrange the shrimp in a single layer on the prepared tray in the air fryer basket and spray them with the cooking spray.

Step 10 –Cook the shrimp until they are beginning to turn golden, about 2-3 minutes.

Step 11 –Flip the shrimp and spray them again with the cooking spray.

Step 12 –Cook the shrimp until golden-brown on the outside, about 2-3 minutes.

Step 13 –Transfer the cooked shrimp to a plate and repeat until all of the shrimp is cooked.

Step 14 –Serve the shrimp in the warm tortillas topped with the coleslaw and the avocado slices.
