Maria’s Chicken Pepper Alfredo

Maria, our dear neighbor, is pretty much an angel on earth. She loves to get to know as many people as she can and find ways to make them feel loved. Her love language is making delicious dishes, and wow, oh, wow, aren’t we glad that’s the case! Once a week, she’ll make a big pot of Maria’s Chicken Pepper Alfredo, that’s what we like to call it. We head over to her house, catch up on what’s current, and then load our plates with the tender, cheesy noodles tossed with juicy chicken, bright peppers, and nutty mushrooms. While we chow down, we laugh and cry and just enjoy each other’s company. We’re so thankful for our hospitable neighbor and for her wonderful creation of Maria’s Chicken Pepper Alfredo. Our neighborhood feels like a dream come true because of her!

Ingredients

  • 1 1/2 pounds chicken tenderloins, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1/2 cup mushrooms, sliced
  • 1/4 cup red onion, finely chopped
  • 4 strips turkey bacon or pork bacon, chopped
  • 1 clove garlic, minced
  • 1 (15-ounce) jar roasted red pepper
  • 8 ounces linguine, cooked
  • Alfredo sauce, to taste
  • 1/4 cup parmesan cheese, grated

Directions

Step 1 –Sprinkle the chicken tenderloins with the garlic powder and the pepper.

Step 2 –In a large skillet, heat the oil over medium heat.

Step 3 –Add the seasoned tenderloins, the mushrooms, the onion, the bacon, the garlic, and the red peppers to the skillet.

Step 4 –Cook until the tenderloins are no longer pink and reach an internal temperature of 165 degrees F, about 8-10 minutes.

Step 5 –Add the linguine and the Alfredo sauce to the skillet, and cook, stirring to combine, until it is heated through.

Step 6 –Sprinkle the pasta mixture with the parmesan cheese.

Step 7 –Serve.
