Ingredients
- 4 (4-ounce) chicken breast halves, boneless and skinless
- 1 (15-ounce) can of no-salt-added black beans, rinsed and drained
- 1 (14.5-ounce) can of Mexican stewed tomatoes, undrained
- 1 (12-ounce) jar of roasted sweet red peppers, drained and cut into strips
- 1 large onion, chopped
- pepper, to taste
- rice, cooked and hot
Directions
Step 1 –Place the chicken in a 3-quart slow cooker.
Step 2 –In a bowl, combine the beans, tomatoes, red peppers, onion, and pepper.
Step 3 –Pour the red pepper mixture over the chicken.
Step 4 –Cover and cook on low until the chicken is tender, about 6 hours.
Step 5 –Serve over rice.
