Ingredients
- 8 tablespoons unsalted butter, plus more, to taste, for greasing the dish
- 1/2 cup milk
- 1/2 cup white sugar
- 1/2 cup brown sugar, firmly packed
- salt, to taste
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 2 cups confectioners’ sugar
Directions
Step 1 –Use the extra butter to grease a 9×13-inch baking dish.
Step 2 –In a heavy pan over medium heat, add the remaining 8 tablespoons of the butter, the milk, the white sugar, the brown sugar, and the salt and bring to a boil, stirring constantly, about 6 minutes.
Step 3 –Transfer the pan from the heat and let the sugar mixture cool briefly.
Step 4 –Add the vanilla, the cocoa powder, and the confectioners’ sugar to the cooled sugar mixture and beat with an electric hand mixer until the fudge is smooth and thick.
Step 5 –Pour the fudge into the prepared baking pan and let it rest until it is cool enough to touch.
Step 6 –Use a spatula to roll the fudge into a log-shape and wrap it in plastic wrap.
Step 7 –Place the fudge log in the freezer to chill for 20 minutes.
Step 8 –Slice and serve.
