Million Dollar Fall Sammie

If we had a dollar for every time we heard someone say that the Million Dollar Fall Sammie was their favorite thing to make for lunch, well, let’s just say we’d be able to quit our day job. Once you try this fall-inspired handheld, you’ll understand why others would pay good money to experience it bite after bite. What’s the craze about? Well, when you have a warm, savory everything bagel loaded with crispy veggies, juicy fruit, melty cheese, and a sunny-side egg in your hand, you get super invested in all the flavors. Then, you taste tangy and sweet fig preserves slathered on both sides, and that’s when you go all in and claim the Million Dollar Fall Sammie as your fave afternoon main. Money can’t buy happiness, and that’s true because every bite of this bagel bonanza is priceless!

Ingredients

  • 3 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • sea salt, to taste
  • 2 everything bagels, toasted
  • 4 slices cheddar cheese, or cheese of choice
  • 4 tablespoons fig preserves
  • 2 heaping handfuls arugula, cooked until wilted
  • 1/2 apple, sliced
  • 1/2 Bosc pear, cored and sliced
  • 2 eggs, cooked sunny-side up

Directions

Step 1 –Heat the oil in a large skillet over medium-high heat.

Step 2 –Add the sliced onion and sauté, stirring occasionally, until the onions begin to sweat and turn translucent, about 8 minutes.

Step 3 –Sprinkle the onions liberally with the sea salt and reduce the heat to medium-low.

Step 4 –Continue cooking the onions, stirring occasionally, until they are golden-brown and caramelized, about 45 minutes.

Step 5 –Preheat the oven to the high broil setting.

Step 6 –Slice the bagels in half and place them on a baking sheet.

Step 7 –Toast the bagels on the top shelf of the oven under the broiler until golden-brown, about 1 minute.

Step 8 –Carefully add a slice of the cheese on each of the four bagel slices and continue baking until the cheese has melted, about 1-2 minutes.

Step 9 –Smear 1 tablespoon of the fig preserves over each cheesy bagel slice.

Step 10 –Top each of the bagel bottoms with the wilted arugula, the sliced apple, the pear, the caramelized onions, and a sunny-side up egg. Place the bagel tops on top.

Step 11 –Slice in half and serve.
